Tangy Turkey Patties

  • 1 pound lean organic ground turkey breast
  • 4 scallions, finely chopped with the bulbs removed
  • 1/2 cup diced pear
  • 1-2 jalapeño peppers, seeds removed and diced
  • 1/4 cup cilantro leaves, diced
  • 1 tablespoon grated fresh ginger root
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon red pepper flakes
  • 3 teaspoons olive oil
  • 4 medium oranges, peeled and cut into wedges

Using a medium sized bowl, mix in the turkey, scallions, pear, jalapeño, cilantro leaves, ginger root, salt and pepper flakes and mash together. Add 1 ½ teaspoons of the olive oil and form the mixture into 8 even patties.

Use the other 1 ½ teaspoons of olive oil in a large skillet on medium heat. Place the patties in the pan and cook for about 4 minutes on each side, making sure that there is no longer pink in the center. Top the patties with the oranges and serve.
